Acute pancreatitis
First of all, let's talk about nutrition for acute pancreatitis. You should not eat at all immediately after the exacerbation and for the next two days. We are allowed only five or six glasses of mineral water. Organ regeneration occurs due to the lack of secretion of gastric and pancreatic juice.
You can eat on the third day, but eat liquid salt without high amounts of carbohydrates. Soups with wheat crackers, vegetables and cereals are allowed with a weak broth. After that, you can add steamed omelet, turkey fillet, chicken, lean fish.
On the fifth day, the amount of calories increases to 700-800 kcal, including 200 g of carbohydrates and 15 g of protein. The oils are presented between the sixth and ninth days.
During this period, the menu should be as follows:
- Breakfast with milk-free rice porridge, sugary tea, oranges (apples);
- Mashed carrots (potatoes), boiled low-fat fish or chicken (50 g), a snack in hip broth;
- 150 g of broth (vegetables), 30 g of boiled fish (veal), apple puree, mashed potatoes for dinner;
- Second snack. 50 g of cottage cheese (0-2%) sugar, sweet tea;
- Instead of dinner - a spoonful of honey and boiled water (250 ml).
Recovery after exacerbation

You can eat:

- Pasta. Do not add sauce, only olive oil, butter. Do not fry with garlic, butter, onion;
- Dairy products. Whole milk is not recommended. fermented baked milk, kefir, cottage cheese up to 9%, soft cheeses are allowed;
- eggs. Just like an omelet or soft-boiled. Use rarely;
- Vegetables. Cooked, boiled, pureed, vegetarian soups, stews. Pay attention to carrots, potatoes, melons, beets, green peas, cauliflower. You can't eat most of the cruciferous family, mushrooms, horseradish, raw onions, spinach, garlic, beans (usually legumes), sweet peppers, sorrel;
- We also cook fruit, compotes, jellies, mashed potatoes. Apricots, watermelons, melons are ideal;
- Drink tea with dry white bread, delicious and not rich biscuits with pancreatitis;
- Homemade jelly, mousse. Less often, marshmallows;
- Non-carbonated mineral waters, compote, weak tea, hip juice, jelly.
Chronic form
The diet for chronic pancreatitis differs from the menu for acute inflammation. Chronic "version" develops with an acute inflammatory process of the gland, cirrhosis, hepatitis, gallstone disease, intestinal and gastric ulcers, atherosclerosis. The menu should take into account the disease in which pancreatitis develops.
The main treatment for you is not a drug, but a diet for chronic pancreatitis, its approximate menu is based on several principles:
- We eat six times a day, and slowly, products with a laxative effect are required.
- Monitor your daily protein intake. You need 130 g per day, plant proteins need 30% of this figure. Beef, beef, rabbit, turkey, low-fat pork, chicken and lean fish are recommended. With constant pain, the meat is chopped or steamed. You should not give up low-fat fish and meat dishes: they will prevent fatty degeneration of the liver, which is characteristic of chronic inflammatory processes in the pancreas;
- The fat conversion is met with fresh cottage cheese (not sour and with a minimum percentage of fat). Other dairy products are also needed. All milk is added to first meals, cereals, jelly or drink half a glass a day (if well tolerated). The fat content of milk should not exceed 2. 5%. If you feel good, let's say cheese (a little) with a minimum of fat and soft varieties. Don't forget about kefir and fermented baked milk (homemade is the best choice). There is no need to eat store-bought yogurt delicious and starchy: it is of little use here;
- eggs. Not all are recommended. In addition to other foods, eggs are taken in the form of steamed omelet (protein), whipped proteins in other foods;
- Vegetable proteins. We look for them in rice, pasta, yesterday's bread, oats, semolina, bread crumbs, buckwheat. Legumes are prohibited;
- Oils. The patient's diet should include 70 of them. 80% must be of animal origin. They will be consumed properly with other foods and snacks. Put butter in the prepared porridge or pasta before eating. It is allowed if you tolerate vegetable oils well. Other types of fats (culinary, beef, margarine, pork) are prohibited;
- Carbohydrates. They need up to 350 g per day. These are honey, sugar, syrup and jams. Need to eat semolina, oatmeal, buckwheat, pearl barley, rice, pasta. Vegetables include carrots and beets, potatoes, melons (zucchini, squash, squash). It is better to cook them in steam or water, steam pudding is also suitable, it would be ideal to eat vegetables in the form of mashed potatoes. Do not eat them raw. Bread is allowed white, black, gray;
- Fruit. Most non-acidic varieties need apples. Cook the compote, wipe, boil. Dried fruits are suitable for the latter;
- sauces. All types of pancreatitis are allowed in one quintal made of flour and milk. We do not pass the flour, we add a minimum of salt;
- First meal. We never give them up. You are allowed grains, vegetables, lean poultry, meat, fruit, dairy soups;
- Drinks. In addition to the above compote, it is useful to drink fruit juices, milk tea, mineral water;
- Extras, special products. Add protein powder and vitamins to your diet;
Do not overeat, the amount of food (plus all the liquids you drink) should not exceed two and a half kg. No matter how strict the diet for pancreatitis, the approximate menu can not be boring and varied.
How to organize your meals for a chronic illness:

- Fats and complex carbohydrates are consumed within our norms, carbohydrates are obtained from cereals;
- Jam, cake, dough, honey, sugar and salt are used less than usual.
It is worth avoiding substances that irritate the mucous membranes of the gastrointestinal tract during remission. It's not just alcohol - avoid vinegar and any spices.
If remission occurs, the diet can be changed. Now it's not just boiling or steaming food. You can cook and cook vegetables, fish and meat. Refuse to rub: eating whole food is still allowed.
